Antioxidant capacity of a number of phenolic acids (A) and polyphenols (B) on the TAC assay. The indicated concentrations of different phenolic acids (A) and purified polyphenols (B) were assayed for their inhibitory effect of crocin oxidation, over the range 0–10 μg/ml for phenolic acids and 10-7–10-5 M for polyphenols. A Trolox standard curve is presented for comparison.
